Mediterranean Chicken & Quinoa Salad

Healthy Lunch, Healthy Dinner

This is one of my favorite dishes. It is fairly easy to make and tastes good hot or cold.

I like to make a big batch for dinner then portion out a bunch for the rest of the week for lunches.

Ingredients

  • 1 Cup Quinoa, uncooked
  • 4 Small Chicken Breasts
  • 1/2 Green Pepper
  • 1/2 Onion
  • 2/3 Cucumber
  • 20 Grape Tomatoes
  • 20 Kalamata Olives
  • 1Tbsp Olive Oil
  • 4 Tbsp red wine vinegar
  • 6 Tbsp Lemon Juice
  • 1/2 Cup Feta
  • Oregano
  • Salt
  • Pepper
  • Garlic Powder

Directions

  1. Cook 1 cup dried quinoa with 2 cup water, or you could use Chicken Broth
  2. Season Chicken with Salt, Pepper, and Garlic Powder.
  3. Cook in a skillet lightly sprayed over medium heat about 15 minutes or until cooked through
  4. While Chicken and Quinoa are cooking chop up the Green Pepper, Onion, Cucumber, Grape Tomatoes, Kalamata Olives, and place them in a large mixing bowl
  5. Add Oregeno to taste, we used about 1/2 Tbsp
  6. In a smaller bowl mix the Lemon Juice, Red Wine Vinegar, and Olive Oil
  7. When Chicken is cooked, chop it and add to the vegetable mix
  8. When Quinoa is cooked add it to the vegetable mix
  9. Mix Gently
  10. Place in the freezer for a couple of minutes, stir, then place back in the fridge until cool
  11. Add the Feta
  12. Add the Dressing Mix
  13. Mix Gently
  14. Serve and Enjoy!
