This is one of my favorite dishes. It is fairly easy to make and tastes good hot or cold.
I like to make a big batch for dinner then portion out a bunch for the rest of the week for lunches.
Ingredients
- 1 Cup Quinoa, uncooked
- 4 Small Chicken Breasts
- 1/2 Green Pepper
- 1/2 Onion
- 2/3 Cucumber
- 20 Grape Tomatoes
- 20 Kalamata Olives
- 1Tbsp Olive Oil
- 4 Tbsp red wine vinegar
- 6 Tbsp Lemon Juice
- 1/2 Cup Feta
- Oregano
- Salt
- Pepper
- Garlic Powder
Directions
- Cook 1 cup dried quinoa with 2 cup water, or you could use Chicken Broth
- Season Chicken with Salt, Pepper, and Garlic Powder.
- Cook in a skillet lightly sprayed over medium heat about 15 minutes or until cooked through
- While Chicken and Quinoa are cooking chop up the Green Pepper, Onion, Cucumber, Grape Tomatoes, Kalamata Olives, and place them in a large mixing bowl
- Add Oregeno to taste, we used about 1/2 Tbsp
- In a smaller bowl mix the Lemon Juice, Red Wine Vinegar, and Olive Oil
- When Chicken is cooked, chop it and add to the vegetable mix
- When Quinoa is cooked add it to the vegetable mix
- Mix Gently
- Place in the freezer for a couple of minutes, stir, then place back in the fridge until cool
- Add the Feta
- Add the Dressing Mix
- Mix Gently
- Serve and Enjoy!
