Simple and Healthy Recipe


1 Chicken Breast, cut in half

1 Medium Tomato, sliced

Fresh Basil




1 tbsp balsamic


  1. Preheat oven to 400 degrees
  2. Place foil or a baking sheet on baking tray and spray with non stick spray
  3. Place 2 slices of tomato down for each chicken breast
  4. Add Chicken breast on top of tomato
  5. Season with Salt and Pepper to taste
  6. Bake in oven for 20 – 25 minutes or until chicken is cooked at 165 degrees
  7. Top with Mozzarella and broil until cheese is melted and starting to brown
  8. Pull out of oven and top with remaining tomato, fresh basil, and balsamic

I actually made double the recipe for this so I could have left overs for lunch and served the chicken dish on top of a salad for a nice light lunch. It was amazing with balsamic dressing
